古晋叻沙 Kuching Laksa

古晋不能不提的美食

就是叻沙
砂朥越叻沙，源自古晋，流行在东马一带
叻沙来源是受古印度文化的影响
古印度梵文中laksha意思指数量繁多
因叻沙混合各种香料、鱼虾、蔬菜和面条多种食材
融合多种不同的味道
因此借用梵文laksha一词而成
古晋叻沙的颜色类似红咖喱
但用料不含咖喱香料
汤头是使用巴拉盏和虾壳来熬煮
煮好后再加入椰浆
配上米粉
米粉上铺满豆芽、蛋丝、鸡丝、虾子和香菜
食用前可以再挤上一点酸柑
吃起来酸酸辣辣
又有巴拉盏和虾子的浓郁鲜味
开胃又好吃

Laksa is not to be left out when talk about the food in Kuching. Sarawak Laksa comes from Kuching and is popular in the East Malaysia. The name "Laksa" is believed to be originated from the Hindi word "Laksha" which means "a lot" or "one hundred thousand". Thus it represented Laksa which mixed a wide range of ingredients like the spices, fish and prawns, vegetables and noodles, which result in a perfect combination of different tastes.

Kuching Laksa look like red curry but it does not use any curry paste. Instead, the broth is cooked with belacan, prawns, and added with coconut milk. The Bee Hoon (rice vermicelli) topped with bean sprouts, omelette strips, chicken strips, peeled boiled prawns and coriander leaves, with the option to add lime.

It tastes spicy and sour, with the thick broth of belacan and prawn, which increase the appetite and taste really good.

古晋干捞面 Kuching Kolo Mee

古晋最具代表性的美食之一

就是干捞面
其中一种关于干捞面由来的说法是
干捞面是从广东人的云吞面演变而来
经过时间的演变和为了符合当地的口味
就去了云吞，加入叉烧
又因叫卖时广东发音“干捞面”
非广东人听成了谐音kolo
因此更有人称它为哥罗面
干捞面吃起来有弹性，带葱香
和葱油拌在一起，吃起来不会干
撒上点胡椒粉，带着一点胡椒香味

One of the most iconic food in Kuching is the Kolo Mee. Some says that Kolo Mee is came from the Wanton (dumpling) Mee of Cantonese. As the time passed, the wanton is replaced by char siew (pork) to fit into local’s preference. The old Cantonese called it “Gong Lou Mee” but the non-Cantonese misunderstood it as “Kolo Mee”, and this comes the name of Kolo Mee.

Kolo Mee has a firm texture with fried shallot. The noodles mix with the shallot oil and it is a bit wet. It is tastier to eat with a small amount of white pepper.

古晋除了干捞面，还可以有干捞粿条，干捞米粉，干捞面薄等
或把两种捞在一起吃，价钱也不会增加
例如，干捞面参粿条

There are also Kolo Kueh Tiaw, Kolo Bee Hoon, Kolo Mee Pok besides Kolo Mee. Some even prefer to mix two of them and the price will still remain the same, one of the example is to mix the noodles with kueh tiaw. 

干捞，是白话的说法，是干拌的意思

古晋的干捞面
是将面条拌以叉烧，酱青、葱、葱油、碎猪肉的一道面食
有些店家也会加入海鲜或鸡肉等
或是kosong面（不加料）加一碗汤
大多数是猪杂汤，酿豆腐或是水饺汤

Kolo means noodles taken out of the boiling water and mix with the ingredients. The Kolo Mee in Kuching is mixed with char siew, light soy sauce, fried onion, onion oil and minced meat, some noodle stalls may also add seafood or chicken. Another way serving Kolo Mee is the kosong noodle (plain noodles) with soup, the most common is pig organ soup, Yong Tau Fu (tofu stuffed with meat) or dumpling soup.

在地人点面都会让煮面师傅知道

面要直或卷，要白或红
红的则会加入叉烧油，味道较甜
如果你只是说要干捞面
大多数情况下你会拿到一碗白的卷面

The Locals will let the cook know whether they want the straight noodles or curly noodles, original or red. The red noodles will add some char siew sauce to make it taste sweeter. If you only tell that you want Kolo Mee, most of the time you will get a bowl original curly noodles.

Annah Rais 温泉 Annah Rais Hot Spring

Annah Rais 温泉
靠近Annah Rais 长屋
是个连许多古晋人都不知道的温泉
它距离古晋大约一个小时的路程
途中会经过Semenggoh Wildlife和婆罗洲高原
自从近几年装修后隔开热水和冷水不会混合
温泉的热度终于得以保持
那里也有厕所供简单冲洗和换衣
入门票成人RM5，小孩则是RM3
开放时间是早上八点到下午五点
但下雨时未必能进入
因此前往温泉之前最好先确定是否开放
而平时前来的人极少
只有在周末，来烧烤泡温泉玩水的人会比较多


这里是个清澈的溪流，还可看到河里有鱼
有热泉的地方，水底的沙子也是热的
可以清晰看见泡泡一直从水底冒出


中间围起来的池里最热，温泉水的颜色也不同
但并没有平时温泉水的硫磺味


泡在温泉里，脚有种快被煮熟的感觉
习惯后倒是很舒服
即使只是泡脚，很快身体也热了
边泡脚，边欣赏美景
悠闲又舒服
从古晋市区到Annah Rais一路上的风景也是极好
因为偏离市区，车辆较少
所以那里空气特别清新

Annah Rais Hot Spring which is near to the Annah Rais Longhouse, is a less known hot spring by people including the local. It took about an hour journey from Kuching city and will pass by Semenggoh Wildlife and Borneo Highland. Since after a renovation recent year, the hot spring area is wall up to separate the hot water from the icy-cold stream. There are also toilets for use to clean up and change. The entrance ticket is RM5 for adult and RM3 for kid, and the operation hour is from 8am to 5pm. No visiting will be allowed during the raining season thus it will be good to check before you pay a visit.

Most of the time there are very minimum of people visiting the hot spring. However, during weekend, there are usually quite a number of locals having BBQ and enjoy the hot spring in the stream.

This is a crystal clear stream, and you could find school of fishes there. Nearer to the hot spring, one can feel the heat from the sand beneath the water, and there are bubble as the hot water came out from the ground. The walled up pond at the middle is the hottest, and the water in the pond is also different with the stream. What’s nice is, it does not have strong smell of sulfur like the other hot spring does.

It feels boiling hot when first dipping into the hot spring but soon you will get used to it. The heat will flow to the whole body even if only dipping your legs. It is calming and enjoying while you enjoy your hot spring and the scene at the same time.
It is a scenic drive from Kuching to Annah Rais, there is not much vehicle along the way and that’s probably one of the reason we can enjoy the fresh and cool air along the way.

古晋，马来西亚砂拉越州首府

在马来文的意思是“猫”，故也称猫城
城市的标志就是一只大白猫
而坐落在老街浮罗岸路口的大白猫
还会因节日的不同换上不同的衣裳
它是座民风淳朴的城市

美食更是不容错过
干捞面、古晋叻沙、粿汁、茄汁粿条等，多不胜数
甚至从其他省份传过来的
诗巫干盘面、光饼等
个个各有特色
无可否认，这里是个旅行的好地方

Kuching, the capital in the state of Sarawak in Malaysia, it means “cat” in Malay thus it is also known as the Cat City and the mascot of Kuching is a huge white cat statue. Furthermore, the white cat at the main street – Padungan, will be dressed up according to the festive season.

Comparing to most of the cities, Kuching considered a peaceful city. The lifestyle of the people there is relaxing and their pace is slow.

Not only having the historical buildings which showcasing tis culture and history, there are also numbers of national parks with the nature beauty of Kuching. Not to forget the numerous authentic and delicious food such as kolo mee, Kuching laksa, kueh chap, tomato kueh teow, as well as those originate from the other cities in Sarawak, some example will be the Kampua noodle and Kong Pia from Sibu. It is pretty sure that Kuching is a nice city for travel.
